I'm going to a party tonight and I hate to show up empty-handed (unless it's at my sister's, then I show up extra hungry). I wanted to make something bite-size and delicious, but what? My ah-ha! moment? Oreo truffles!
Oreo truffles are incredibly easy to make and extremely satisfying. Only 3 ingredient! And no baking required. For all the vegans out there- just one easy substitution and these are 100% vegan.
Makes approximately 36 1-inch truffles
1 package of Oreos (or your favorite generic chocolate sandwich cookie)
1 8 oz. package cream cheese (Follow Your Heart Cream Cheese Alternative or Toffuti Better than Cream Cheese)
1 package chocolate-flavored bark (I used Kroger brand which is vegan, you could also use your favorite chocolate chips)
Finely crush 5-7 cookies in a food processor or place them in a ziploc bag and crush into a fine consistency. Reserve for later.
Crush remaining cookies and stir in softened cream cheese. Use the back of a large spoon to help mash the two together. If you let the cream cheese reach room temperature it will be easier to combine the two.
Roll the mixture into 1" balls and place on wax paper covered cookie sheet. If they are very soft, stick them in the refrigerator for a half hour to prevent them from falling apart in the hot chocolate.
Melt chocolate as directed on the package and then dip balls into chocolate, tap off extra and set aside on wax/parchment paper covered cookie sheet to dry. Sprinkle the tops with the 7 crushed cookies for decoration.
Let the chocolate set- refrigerate or pop them in the freezer to speed this up. And enjoy!
Casualty of the day: I broke the handle of my spatula clean in half. So sad. It was my only one! That's what I get for buying kitchen supplies at IKEA. Crate and Barrel here I come!
